1) The farmers will trade for it yes- mostly in food though they also have some fur cloaks etc that they will trade for enough of it.
2) Dragon form is a-okay though bare in mind the animals will be pretty skittish to have a big shadow flying overhead!
3) There are certainly things that aren't edible... you mean like poisonous foods etc?
